Meatballs
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic, minced
- Salt and pepper
Tomato sauce
- 1 can (28 oz) crushed tomatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper
Serving
- 12 oz spaghetti, cooked according to package instructions
- Grated Parmesan cheese
- Fresh basil or parsley for garnish
Directions
STEP 1
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper
STEP 2
In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, egg, garlic, salt, and pepper. Form into meatballs and place on the prepared baking sheet
STEP 3
Bake meatballs for 15-20 minutes or until cooked through and golden brown
STEP 4
In a large skillet or saucepan, sauté onions and garlic until softened. Add crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 10-15 minutes
STEP 5
Add the baked chicken meatballs to the sauce and simmer for an additional 5 minutes
STEP 6
Serve the chicken meatballs and sauce over cooked spaghetti. Garnish with Parmesan and fresh basil or parsley
