What you'll need
Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper
- Fresh parsley for garnish (optional)
Directions
STEP 1
Season chicken thighs with salt, pepper, smoked paprika, and dried thyme
STEP 2
Heat a large skillet over medium-high heat. Place chicken, skin side down, and sear until golden brown. Flip and sear the other side. Remove chicken and set aside
STEP 3
In the same skillet, sauté onions and garlic until softened
STEP 4
Add rice, stirring to coat in the onion and garlic mixture
STEP 5
Pour in chicken broth and bring to a simmer. Nestle the seared chicken back into the skillet, skin side up
STEP 6
Cover with a lid and simmer on low heat for 20-25 minutes, or until chicken is cooked through and rice is tender

Scatter diced bell pepper over the skillet, cover, and cook for an additional 5 minutes until the pepper is tender
STEP 8
Garnish with fresh parsley if desired and serve hot
