  • 1/2 cup (113g) unsalted butter
  • 1/2 cup (60g) all-purpose flour
  • 4 cups (960ml) whole milk
  • 4 cups (about 16 oz) shredded sharp cheddar cheese
  • 1 cup (about 4 oz) shredded mozzarella cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1 cup (about 4 oz) breadcrumbs (for topping)

Directions
