- 1/2 cup (113g) unsalted butter
- 1/2 cup (60g) all-purpose flour
- 4 cups (960ml) whole milk
- 4 cups (about 16 oz) shredded sharp cheddar cheese
- 1 cup (about 4 oz) shredded mozzarella cheese
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- 1 cup (about 4 oz) breadcrumbs (for topping)
