Ingredients

  • 1 pound ground Italian sausage
  • 1 onion, finely chopped
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups broken lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Directions​

STEP 1

Set the Instant Pot to sauté mode. Add ground Italian sausage and cook until browned, breaking it apart with a wooden spoon

 

STEP 2

Add chopped onion and minced garlic. Sauté for 2-3 minutes until onions are translucent

 

STEP 3

Pour in crushed tomatoes, tomato sauce, chicken broth, oregano, basil, salt, and pepper. Stir well

 

STEP 4

Add broken lasagna noodles and stir again. Cancel the sauté mode

 

STEP 5

Close the Instant Pot lid, set to sealing position, and cook on high pressure for 5 minutes

 

STEP 6

Once done, perform a quick pressure release. Carefully open the lid

 

STEP 7

Stir in ricotta cheese until well combined

 

STEP 8

Ladle the soup into bowls and top with shredded mozzarella

 

STEP 9

Optional: Broil in the oven for a few minutes to melt and brown the cheese

 

STEP 10

Garnish with fresh basil or parsley and serve hot
