  • 2 pounds of boneless, skinless chicken breasts, diced
  • 1 cup frozen peas and carrots mix
  • 1 cup corn kernels
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper

Cobbler topping

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk

Directions​

STEP 1

Preheat the oven to 400°F (200°C)

In a skillet, melt butter over medium heat. Add onions, celery, and garlic. Sauté until softened

Add diced chicken to the skillet and cook until browned. Sprinkle flour over the mixture and stir well

 

STEP 4

Pour in chicken broth and milk, stirring continuously to avoid lumps. Add thyme, salt, and pepper. Allow the mixture to thicken

Stir in frozen peas and carrots, along with corn. Transfer the mixture to an oven-safe casserole dish

 

STEP 6

In a mixing bowl, combine flour, baking powder, and salt for the cobbler topping. Cut in cold butter until the mixture resembles coarse crumbs

Stir in milk until just combined. Drop spoonfuls of the cobbler mixture onto the chicken filling

Bake for 25-30 minutes or until the cobbler topping is golden brown and the filling is bubbly
