Pie crust
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup ice water
Apple filling
- 6 cups apples, peeled, cored, and sliced (e.g., Granny Smith, Honeycrisp)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
Finishing
- 1 egg (for egg wash)
- 1 tablespoon sugar (for sprinkling)
Directions
STEP 1
In a bowl, combine flour, sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs
STEP 2
Gradually add ice water, mixing until the dough comes together. Divide into two discs, wrap in plastic, and chill for at least 1 hour
STEP 3
Roll out one disc to fit the pie dish and place it in the bottom. Keep the second disc refrigerated

Preheat the oven to 425°F (220°C)

In a large bowl, combine sliced apples, sugars, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are coated

Pour the apple filling into the prepared pie crust

Roll out the second disc and place it over the filling. Seal and crimp the edges
