What you'll need

Ingredients

  • 12 oz (340g) linguine or your preferred pasta
  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper
  • 2 tablespoons olive oil
  • 3/4 cup (180ml) heavy cream
  • 1 cup (about 40g) fresh basil leaves
  • 1/2 cup (about 50g) grated Parmesan cheese
  • 1/4 cup (30g) pine nuts
  • 2 cloves garlic, minced
  • 1/2 cup (120ml) extra-virgin olive oil
  • 1 cup (about 120g) cherry tomatoes, halved
  • Fresh basil or parsley for garnish

Directions

STEP 1

Cook the pasta according to package instructions. Drain and set aside

 

STEP 2

Season the chicken pieces with salt and black pepper

In a skillet, heat olive oil over medium-high heat. Cook the chicken until browned and cooked through. Set aside

 

STEP 4

In a blender or food processor, combine heavy cream, fresh basil, Parmesan cheese, pine nuts, and minced garlic. Blend until smooth

 

STEP 5

With the blender running, slowly add extra-virgin olive oil until the pesto sauce is well combined

 

STEP 6

In the skillet used for the chicken, add the cooked pasta, chicken, cherry tomatoes, and pesto sauce. Toss until everything is evenly coated and heated through

 

STEP 7

Garnish with fresh basil or parsley and serve hot
